Waffles

Breakfast on the weekends should be fun, enjoyable and relaxing.  These super simple and quick waffles are perfect for just that.  You only need a food processor and a waffle maker, which makes clean-up quick and painless.

The best part about this recipe is that the sweetness only comes from the bananas so you don’t really need to top it with maple syrup.  It’s also super versatile; check out my variations below and make different waffles for every day of the week.

serves 4

Ingredients:

  • 2 bananas, plus a few for toppings
  • 5 eggs
  • 1/2 cup almond butter
  • 1/4 cup melted ghee
  • 1/2 cup coconut flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tbsp cinnamon

Directions:

  1. Preheat the waffle iron.
  2. Combine the above ingredients, and any additional ingredients shown in the Variations below, into a food processor and blend until smooth. You may have to use a spatula to wipe down the sides.
  3. Coat the waffle iron with ghee and pour batter onto the waffle iron.
  4. Cook until brown
  5. Top with sliced bananas
  6. Cooked waffles can be stored in a closed container in the refrigerator for a week or in the freezer for up to a month.
Pumpkin Spice Waffles

Variation – Pumpkin Spice Waffles:

Add the following to the recipe above in Step 2:

  • 1/2 cup fresh pumpkin
  • 1 tsp nutmeg
  • 1/2 tsp allspice

Variation – Chocolate Chip Waffles:

Add the following to the recipe above in Step 2:

  • 1/2 cup of chopped 100% chocolate

Variation – Pecan Waffles:

Add the following to the recipe above in Step 2:

  • 1/2 cup of chopped pecans
