Date Nut Bars

Makes 30 two-inch squares

Ingredients:

  • ½ cup almonds
  • ½ cup cashews
  • ½ medium apple
  • ¼ cup shredded unsweetened coconut
  • 1 tsp cinnamon
  • 2 tbsp lemon/lime juice
  • 10 medjool dates
  • 10 dried apricots

Directions:

  1. Combine the almonds, cashews, apple, coconut, cinnamon and lime juice into a food processor and process until nuts and apples are well blended.
  2. Add the lemon/lime juice, medjool dates and apricots.
  3. Process until the mixture forms a cohesive ball.
  4. Remove the mixture and place on a pan lined with parchment paper.
  5. Spread the mixture with a spatula until it is ½-inch thick.  Initially, the mixture will be quite sticky, but after working it, the mixture will become less sticky and spread out evenly.
  6. Place in the refrigerator so the mixture can harden before you cut it.
  7. Store in a covered container in the refrigerator and it will last for 7-10 days.

Almond Joy Variation:

  • ½ cup almonds
  • ½ cup chocolate chips
  • ½ cup shredded unsweetened coconut
  • 15 medjool dates

Lemon Cookie Variation:

  • 1 cup cashews
  • 2 tbsp lemon juice
  • 15 medjool dates
