Date Nut Bars

Make these Paleo and Whole30 date nut bars yourself at home in 5 minutes instead of spending tons of money on bars from the store.

Cut them up into smaller pieces too so you don’t overload your body with high amounts of sugar in a short period of time.

They store very well in the fridge and you can indulge in a few squares.  They are chewy, slightly cool, and yummy (of course)!

Date Nut Bars

Makes 30 two-inch squares


  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1/2 medium apple (I love honeycrisp for the sweetness)
  • 1/4 cup shredded unsweetened coconut
  • 1 tsp cinnamon
  • 2 tbsp lemon/lime juice
  • 15 medjool dates


  1. Combine the almonds, cashews, apple, coconut, cinnamon and lime juice into a food processor and process until nuts and apples are well blended.
  2. Add the lemon/lime juice, medjool dates and apricots.
  3. Process until the mixture forms a cohesive ball.
  4. Remove the mixture and place on a pan lined with parchment paper.
  5. Spread the mixture with a spatula until it is ½-inch thick.  Initially, the mixture will be quite sticky, but after working it, the mixture will become less sticky and spread out evenly.
  6. Place in the refrigerator so the mixture can harden before you cut it.
  7. Store in a covered container in the refrigerator and it will last for 7-10 days.

Almond Joy Variation:

  • 1/2 cup almonds
  • 1/2 cup chocolate chips (use 100% chocolate or 1/4 cup cocoa powder for Whole30)
  • 1/2 cup shredded unsweetened coconut
  • 15 medjool dates

Lemon Cookie Variation:

  • 1 cup cashews
  • 2 tbsp lemon juice
  • 15 medjool dates
