These spicy cornbread muffins are completely grain-free and sugar-free. Mixing almond flour and coconut flour together makes the texture of the muffins similar to cornbread without using any corn. This recipe is a healthier alternative since corn is loaded with Genetically Modified Organisms (GMO’s).

I was first introduced to Zax Snax while shopping for my weekly vegetables at my local farmer’s market. I noticed the trail mix snax on display and immediately picked up a package and looked at the ingredients. Excited to see such quality ingredients, I stuck around and talked to Nathan Harris, Camille’s son, about their products and sampled a few. From there, our friendship fostered into a partnership with Zax Snax LLC, and you are the first to know
In addition to the partnership announcement, I’m also debuting my very first recipe video featuring one of the Zax Snax trail mixes.
The very first Zax Snax trail mix I tried that day at the farmer’s market, was Potle Pepita. The flavor lit up my taste buds with the spicy chilies and the calm, sweetness from the coconut offset the spiciness. I immediately thought about how good this would be in a cornbread served next to a big bowl of Texas Chili.
That’s exactly what I did! I created these Spicy Cornbread Muffins featuring the Zax Snax Potle Pepita. Both the nut and seed combination mixed with the spicy seasoning provides the perfect flavor for these muffins. Adding the optional chopped jalapenos to the mixture took the spice of these spicy cornbread muffins to the next level.
