Fourth of July Party Popsicles – Red, White & Blue

Just imagine you’re sitting outside on a nice soft picnic blanket watching the beautiful fireworks going off against the dark sky.  The only things keeping you cool on this lovely summer day are these refreshing popsicles.  Red, white and blue ones of course.

Maybe you’re celebrating with a backyard cookout surrounded by friends and families.  Smelling the wood burning in the pit and listening to the bees as they search for flowers.

The kids are tossing water balloons or playing in the sprinkler to stay cool.

In the midst of all the summer heat, everyone’s enjoying the day.

The only thing to make this backyard cookout any better, would be these Red, White & Blue Popsicles.

These popsicles are refreshing and cool when summer heat is at its hottest or great for an after-dinner snack right before the fireworks show.

Best of all, they are made with real fruit, which is best this time of year.

Celebrate Fourth of July

Our Fourth of July Celebration

Our Fourth of July celebration consists of a simple family backyard cookout with finger foods like Spicy Chicken Wings, Veggies and Homemade Ranch Dip, and Chopped Salad.

Yup it’s all completely Paleo too and perfect for hand-held plates outside.

Once our bellies are full, we wait until it gets dark enough to shoot off our own fireworks.  We probably spend too much on them, but it’s worth the excitement and memories.

Wyatt, Josh, and my Step-Dad usually light up the fireworks while my Mom and me and our family dog, Millie, all enjoy the scene with our Ooos and Ahs.

It’s quite fun.

This year, I’m adding this popsicle to the cookout roundup and serving it as a nice dessert before the fireworks.

It will serve as a nice, refreshing snack for everyone.

Not to mention the added antioxidants to prepare for the firework smoke.  I don’t deny it…I like that smell.

Red, White & Blue Popsicles

Red, White & Blue Popsicles
Serves 8

Ingredients:

  • 2 cups fresh blueberries
  • 1 tbsp coconut nectar
  • 1/4 cup water
  • 2 tbsp chia seeds
  • 1 cup sliced strawberries
  • 1 can coconut milk
  • 2 tsp vanilla extract

Directions:

  1. Heat the blueberries, coconut nectar, water, and chia in a small saucepan.
  2. Bring to a boil and keep stirring for about 5 minutes or until the mixture has thickened.
  3. Once thick, remove from the heat and add the sliced strawberries, coconut milk, and vanilla extract.
  4. Without mixing too much, pour the mixture into a popsicle mold.
  5. Place a popsicle stick in each one and freeze for 2-4 hours.

Popsicle Mold

For best results, a nice popsicle mold is needed.  Not required though, you can always use dixie cups with popsicle sticks.  (I remember doing that as a kid haha.)

This popsicle mold is great!  It’s stainless steel, stands upright, has lids to protect your freezer from getting all gooped up, and it has a slot in the top for the popsicle stick so the stick always stays in the middle.

Overall, a great buy if you’ll be making lots of popsicles.

Mix up the Ingredients by adding in whatever fruit you like.

I chose strawberries and blueberries for the Fourth of July theme, but any combination will work.
